The giant ball of Corpses from Castlevania Symphony of the Night. It's not that the GBOC was the best or even the most interesting boss of this stellar game, it's that it was both the weirdest boss fight ever, and the easiest.
By this point of Symphony any player worth his salt had picked up one of the better swords in the game like the skeleton summoning Sword of Dawn or the buzz saw like Chissagrim and with it's power nearly every enemy was toast. The Giant Ball of Corpses was no different.
It appeard, you went "WTF? A Giant Ball of Corpses?" and then proceeded the beat the hell out of it without blinking an eye.
I like 'em weird and easy.

for some reason, there is no comments box when i when i look on the next article, so i shall post my boss pick here.
I'm surprised noone has mentioned the final boss from serious sam. You fight through hordes of monsters. You seem a guy on the horizon...he keeps getting bigger... and bigger... and BIGGER!!!! OH MY GOD!!! WHAT IS THAT!!! HOW DO I KILL IT!!!
truly a memorable experience.
