The free version only comes with about 25% of the content for customizing and the $10 one comes with everything.
I have the demo, and the amount of content is pretty slim. You'd might as well pick up the full version for $10.

I must say I am very impressed at the Chocobo and guitar. How user-friendly is the Creature Creator, anyway? Is it as impressive a feat as I imagine to create something that even closely resembles an object or animal/character you're familiar with?

The thing's a marvel of user interface, full of layers of more and more advanced ways to create your creature. At every turn, the thing inspires you to be creative. The most immersive experience for me, and I seriously lost hours of time to just having so much fun building stuff. You can get about 60% of the material from torrent sites like PirateBay, which I did.
I'm so getting this game and luanch day and chaining myself to the computer.
