I've never figured out why a fighting game needs a story/plot line

Maybe it's to appeal to Japanese audiences...Like how Dissidia on the PSP supposedly has a 40 hour story even though it's a fighter...

It's there for people who want it.
People who don't care ignore it.

It's to capture a wider audience.

A plot, well... is fun. With a plot there's a sense of purpose to finish the game with every character. Sure, a fighting game's all about duking it out with friends, but you've gotta spend some solo time with the game too.
