This 2 USB deal looks like a turn-off, as in not Rock Band friendly. Is there some sort of device or whatnot that can be done to correct this issue? I'm no techie of course so regular English is preferred.

The first rock band (for the 360) came with a USB hub. I dont see why the ps3 wouldn't. Also, just a generic USB hub would work. Something like these.

It is Rock Band Friendly, Rock Band Guitar and Drum Connectors have a USB port built on them. So you can literally use only one USB port if you wanted to by daisy chaining them.

The First Guitar is connected to the PS3.
The Second Guitar is connected to the First Guitar.
The Drums are connected to the Second Guitar.
The Microphone is connected to the Drums.
And the Hip Bone is connected to the thigh bone.

There was the Nyko Media Hub for the PS3 that went well with the design, but its definitely not Slim friendly...yet.

The 360 only has 2 USB ports (well 3, one is on the back of the unit). I don't know about the PS3, but Rock Band for the 360 comes with a USB hub so you can plug in all the instruments at once. I would think that any regular USB hub would work on the PS3, but I could be wrong. If it becomes a problem, I'm sure Sony (or Activision, or Mad Catz) would be more than willing to make a special licensed USB hub.

Yep, any old $3-5 USB1.1 or USB 2.0 hub will do. My case is rediculous, but I have two hubs coming out for various attachments.

Check out one of the electronic versions of the dollar store (such as Meritline) for a good deal.

A standard USB hub should work. I've not tried it personally, but if they're standard USB ports it will work.

It's called a USB Hub. And it's about $0.99 on eBay. Splits a single USB into four. There are two types: powered externally (from an AC adapter) [more expensive but required for devices that need power from USB] and ones that suck power straight from the USB [cheaper].

Rock Band works with both types, no problem.
Also, the Rock Band 2 (and TB:RB) Guitar USB dongle comes with a 2 way USB hub built-in.

A simple USB hub can remedy this issue. It's basically just a splitter that you can plug into one of the USB ports that allows you to plug in more stuff.
Much like the similarly missing HDMI cable, they can be found at anything from extremely cheap to laughably expensive, but as none of the rock band instruments need to suck much power from the console you should be perfectly fine with a cheapo one.

Not sure whether a hub would affect controller latency much, but even if it does all of the controllers would be on the same hub, so you could adjust the lag to compensate.
