I'm still amazed that even normal EULAs are legally valid.

EULAs aren't automatically valid. Companies claim all kinds of thinks in EULAs that wouldn't actually stand up in court. They do have some validity in the US, but they must comply with various contract and consumer protection laws. So wild claims like this are useless anyway.
