The reason for the "still demo-ing(sp?)" status of this title, is its lack of availability. Nintendo sells these as fast as they make them, and with the huge install base acquired this past Xmas, there are that many more people who are clamouring to buy it.

Its also to their advantage to get these into as many customer's homes as possible, so they can play the "we do it better than Natal/Move" card that they are evidently preparing to play. More games are being sold in bundles with Motion Plus, Classic Controller Pros, and Wii Speaks then we have seen previously. This helps Nintendo shore up their wall against a Move/Natal onslaught with cries of "we already do that, for a lot less money."

Yup--there are regional availability problems in the supply chain. There are loooong discussion threads about this on CAG.

Some parts of the country are overstocked, some have a big fat zero.

There have been 2 or 3 big ad pushes by Nintendo to get product into customer's hands, supported with in-store ad spending at Walmart, Target, and Best Buy since around the beginning of March. And, Nintendo is still having challenges in managing both production and supply to store for this particular item. That is why they have had the big delay in having in-store promos like this one at Gamestop.
