What would be worth paying for is an emulator that can be downloaded or purchased through the VC that allows you to put your original Saturn, Dreamcast, or Sega CD disk into the Wii and play it through an emulator. That really seems like the easiest way to do classic CD-based games. The hardest one would be Dreamcast because of the VMS and saves being made through the controller ports. But Saturn and SegaCD games should be no problem.
As far as good Saturn games, I'll list the best ones I have: X-men vs Street Fighter (Japan) Castlevania SOTN (Japan) Fighters Megamix Last Bronx (Like Soul Calibur but as deep as VF2) Nights into Dreams Virtua Cop 2 (tell me that doesn't belong on Wii!) Daytona USA Virtua Fighter 2 Virtua On (hold both the Wiimote and Nunchuk like the twin-sticks! I don't know where the buttons go, though?)
It's true that compressing the CD audio would turn most of these great games into 50-100MB files, so it's not entirely out of the question to get these games working on the Wii via download. The hard part would be getting the controls to match up. Maybe Sega could make their own Wiimote attachment that looks like the Nights controller (which was basically the Dreamcast controller with 6 face buttons instead of 4). Or just add 2 face buttons to the Nintendo Classic controller.
Fable, despite how violent it can be, is not a realistic re-creation of the real world. It's a vividly different world than, say, the world of GTA:San Andreas. Same thing goes for God of War, there's sex, violence, nudity, yet nobody will ever get mad at it's developers for a sex mini-game, since the entire game takes place in a mythical setting. How likely is a kid to simulate the kills of God of War in his life? How often will a harpie get its wings ripped off by a teenager after playing God of War?
GTA got more public outcry than other games because it took place in a world that resembles the one we live in. If Fable took place in Downtown LA, it would have gotten the same attention of GTA.
First of all, the Wii-mote is not unique - it's been in other controllers in the past. Look at the sword controller for Onimusha 3 - basically a Wii-mote under the hood. There's also boxing games and sword-fighting games in the arcade that use motion sensors in the gloves and swords to do what the Wii-mote is doing. And the DualShock 3 is nothing but a wireless version of the Microsoft motion-sensitive controller you can find in any Best Buy or CompUSA for PC's. That controller is about as old as the GameCube! So innovation is just a fancy way of saying the packaging is different this time around. Sony is not trying to say they're being super innovative, but they're keeping up with their competition, which is what I'd expect them to do at the very least.
