Yes, flying mounts reduce player interaction to some extent, but they also enable Blizz to generate amazing landscapes that help keep player's sense of immersion high.

Try imagining Icecrown completely land mount accessable. It loses a lot of its impressiveness.

Wouldn't hearth Dal -> port SC -> ring Dal work just as well?

I think a third option is more likely:

Blizzard's web infrastructure is about to get pounded by waves of people trying to upgrade their accounts as midnight hits. This is a very easy (although heavy-handed) way to reduce the load on their infrastructure.

The added bonus of the CMs being able to post on the forums when a bunch of the realms (inevitably) lag out and crash under the flood of people heading to northrend is probably going to come in handy as well.
