Then mod it with Gamecube or Wii functionality. There's quite a few tutorials on Shoryuken that instruct you on how.

The producer of the game said a 360/PS3 port would essentially require rebuilding the game for scratch, so they didn't feel it was worth the effort. So unless you're willing to fund the development yourself, it isn't going to happen.

The physics are supposed to be closer to Armageddon's, if the Team 17 Facebook page is to be believed. So while the code + graphics may be from the more recent games, Team 17 is supposedly tweaking the gameplay to be as close to the original Armageddon as possible.

The program executables to run those games are open source, yeah. The full game content (levels, graphics, sounds, etc.) however are still proprietary and you need to have a full copy of the game to get the open source ports to even run properly.
