Nope, no friendly Quilboar at all. Even that prisoner at Vanilla Camp Taurajo was merely using us to get revenge on his former peers. Similar with Centaur - the Desolace clans unite and ally with the Cenarion Circle, making them neutral, if that alliance holds at all, the Vanilla Gelkis&Magram rep grinds were apparently removed from lore, and all other centaur clans are still hostile.
Wolvar would be an excellent Horde race, while Alliance gets Furbolgs. Though with Pandaren in MoP and Worgen in Cata, Blizzard might hold off more "furry" races for later.
I think it boils down to this: playable Trolls, the Darkspear, are just a tiny, "good" fraction of the Troll race. For other playable races, there aren't really that many evil large organizations or even nations. Anyway, there's Deadmines and Scarlet Monastery for evil Humans, there's the Hellfire Bulwark dungeons and Blackrock Spire for evil/Fel Orcs, Gnomeregan for evil Gnomes, The Eye and Sunwell for evil/Fel Blood Elves, Blackrock Depths for evil Dwarves. Tauren and (modern) Night Elves on the other hand don't tend to be corrupted/go evil in large numbers, it's just the lore. (Grimtotem never really had the numbers to provide a dungeon, though their temporary takeover of Thunder Bluff could've been a scenario, if it had happened in MoP)
