I think a Kindle-like device would be terrific in a Higher Education setting, especially if the software on it was similar to Foxit's PDF reader. Allowing users to highlight and add notes to the document would make it the perfect companion for classes ... and free students from having to print all of their required readings off of course management sites (which many colleges and universities are now moving towards or already have). Keeping all of those articles organized on a portable reader would be very efficient and likely cause less strain than having to read from a laptop. Plus, the company that opens this up to Higher Ed will have a huge market.
