Well, it's because it seems that gamers today prefer simplicity over ingenuity and originality. Look at Resident Evil:Outbreak. That, in my opinion, was my ultimate zombie game. Different characters with different personalities, as well as special abilities. The ability to combine weapons and healing items, and each character helped the team out its own unique way.... but very few people liked it. Why? Because it was too complicated. Instead of being patient and looking for different ways to approach something, most gamers jut wanted to pick up a controller and rack up kills. And if you have a game that is as complicated as RE:O, the gap between new and skilled players are greater, and most likely skilled players will end up teaming with inexperienced ones. I think that's why developers like to keep things simple: less time and work, and bridge the gap between many players as possible.
