So, that's what Mortal Kombat's "portable fight stick" looks like, eh? GameStop has pictures of the fighting game reboot's Kollector's Edition and Tournament bundle. The fight stick features Suzo Happ parts and was designed by NetherRealm Studios.
For those who haven't seen the inside of an arcade (or seen one at all) since the early '90s, the button layout on the fight stick may appear unconventional. Former Joystiqer and arcade fighting game proponent Jared Rea explains that it's been the button layout for the Mortal Kombat series since the third iteration, with previous versions lacking the lower-left "Run" button. He notes that most players tend to navigate this layout by having their ring or middle finger hover over the middle block button, moving their whole hand for attacks.

My local arcades never had MK with those button layouts. Theirs were always like that of capcom fighters. I think perhaps my local arcade modded their sticks.

Well it was an MK case, always was. It was just not that stick. It was the Capcom stick, except once when it was the Tekken stick and I complained about having only four buttons.

If the game runs on the JAMMA or JAMMA+ standard, they can just swap some parts around. For SF2 -> MK, it could be as simple as swapping out the motherboard. For a game like Killer Instinct -> Killer Instinct 2, they just swapped the hard drive and ROM chips, as the game ran on the same hardware.
Sometimes they would get replacement side panel artwork if they decided to keep the conversion. Sometimes you will come across mixed cabinets with artwork not even related to the actual game being played.

Oh, and there are conversion cabinets that are done "professionally".
A company will take another cabinet, convert it, then completely redo the cabinet to match the game. You might get mixed sticks with that.
There are slight differences in the cabinets to tell them apart in this case.

Well, even the original MK had that layout, other than the run button. I personally found it pretty awkward, but I will be glad to play this game on my SF4 TE stick with remapped controls.

What they should release is some genesis style fightpads like Capcom did. Maybe have some different styles on them like Scorpion or Sub Zero. That would be sweet.

The price is absolutely ridiculous.
I love the product, but it's priced for collectors. If they charged half that,, and didn't limit availability, I suspect they would have a hit.

It's their business to sell this for more than I'd pay for it.
I do think it's very clever, but it's extremely hard for me to understand what about this justifies that expense (same with the other stick you cite, to be honest).

I like that the kollectors edition has something actually useful instead of just a book or coins or something. It's not worth the 150 to me, but it's more valuable than other collectors editions out there.
